1. Pre-cooling:
There's strict standard for food sanitation and safety. Run the pre-cooling program, the mix in the material tank would be kept at a low temperature. Low temperature is required as bacteria grow slowly under low temperature.
2. Mixer:
Mixer in the hopper helps to keep uniformity of the mix, which avoid the forming of small ice crystal. Otherwise, the ice cream texture is affected.
